Toddler and BLW Friendly Zucchini Slice

I probably make this slice at least once a week, if not more, and have done so for the last 3 years since my eldest started solids. The texture (soft enough for little mouths but not too soft or crumbly to make it difficult to handle) and shape (can easily be cut into soldiers for bubbas still using their palmer grasp) make it perfect for baby lead weaning. And it's yumminess (hello cheeeeese!) make it perfect for toddlers and adults as well!

It's delicious, veggie packed, super quick and easy and the best part - whilst it's called Zucchini Slice, it's super versatile depending on what veggies you have in the fridge/freezer! 

If your little ones are anything like mine, they'll devour this slice (yay!) but also make a mess at the same time (urgh!). A Messy Mat under their high chair will save you a whole heap of time and effort cleaning up.

The base recipe is:

  • 5 eggs
  • 1 cup self-raising flour
  • 1 cup grated cheese
  • 1/4 cup vegetable oil

From there you can add any other veggies/fillings you like! Here's some of my faves:

  • 1 grated zucchini and 200g chopped bacon
  • 1 grated zucchini, 100g frozen peas, 100g frozen corn
  • 200g chopped mushrooms, 200g chopped bacon
  • 1 grated zucchini, 200g chopped red capsicum

But the combinations really are endless!

To cook - simply mix all ingredients together, pour into a lined baking tray and bake for 30 mins (or until cooked through) at 180.

Freezer friendly but in all honesty you'll probably go through it so quickly you won't have a chance to freeze it!
