Potato and Leek Soup

Ingredients

  • 1 brown onion
  • 1 tsp garlic paste
  • 700g potatoes, peeled and chopped
  • 2 leeks
  • 1 ltr stock of choice (I like veggie stock but you can use chicken or beef if you prefer. Opt for a salt reduced stock if using for babies under 12m)
  • 125ml thickened cream
  • Crusty bread to serve
  • Parmesan cheese to serve (optional)

Method

  1. Peel potatoes and chop into 2cm cubes. Wash leeks, thinly slice the pale section. Finely chop onions.
  2. Fry onion and garlic over medium heat with olive oil. Once onion is nicely caramelised add potato and cook for 5 mins. Then add leek and cook for a further 5 mins.
  3. Add stock, bring to the boil then reduce and simmer for 20 mins or until potato is very soft.
  4. Remove from heat and cool for 15 mins.
  5. Add cream then blend either in small batches in a blender or with a stick blender in the pot.
  6. Serve with toasted or fresh bread.

Notes 

This is a quick easy winter warming soup that can be whipped up in 30 mins but also slow cooker friendly and will make your house smell amazing! For slow cooker version, transfer from stove to slow cooker at step 3 and cook for 4 hours or until potato is very soft.

Also perfect for BLW - you can either serve as is and allow bub to self feed from a pre-loaded spoon or scoop out the potato and leak with a very small amount of liquid and blend/mash for a more chunky consistency.
